Frijoles Negros
Ingredients:
• 250g black beans, cooked and drained (or canned)
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 green bell pepper, chopped
• 1 tomato, chopped
• 1 tsp ground cumin
• 1 tsp dried oregano
• Salt and pepper to taste
• Olive oil
• Fresh cilantro, chopped (optional)
Instructions:
1. If using dried beans, cook them according to package instructions until tender. Drain and set aside.
2. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, and chopped green bell pepper. Cook until softened.
3. Stir in the chopped tomato and cook until it starts to break down.
4. Add the cooked beans to the pot along with ground cumin, dried oregano, salt, and pepper. Stir well to combine.
5. Add enough water or broth to achieve your desired consistency (soup-like or thicker stew).
6. Allow the mixture to simmer for about 15-20 minutes, stirring occasionally, to let the flavors meld together.
7. Adjust seasoning if needed and sprinkle with chopped cilantro before serving.
8. Serve hot as a soup or as a side dish with rice.
