Recipe Instructions:

Ingredients:
• 1 lb Italian sausage (sweet or spicy), sliced
• 1 onion, thinly sliced
• 1 bell pepper (red or green), thinly sliced
• 3 cloves garlic, minced
• 1 can (14 oz) diced tomatoes
• 2 cups chicken broth
• 8 oz whole-wheat pasta (penne or fusilli)
• Salt and pepper, to taste
• Fresh basil, chopped, for garnish
• Grated Parmesan cheese, for serving
Instructions:
• In a large pot or Dutch oven, cook sliced sausage over medium-high heat until browned.
• Add thinly sliced onion and bell pepper, sauté until softened.
• Stir in minced garlic and cook for another minute.
• Add diced tomatoes (with juice), chicken broth, and whole-wheat pasta to the pot.
• Bring to a boil, then reduce heat to medium-low. Cover and simmer for about 12-15 minutes, or until pasta is tender and most of the liquid is absorbed.
• Season with salt and pepper to taste.
• Garnish with chopped fresh basil and grated Parmesan cheese.
• Serve hot, directly from the pot.
