Ingredients
600g (about 3) Desiree potatoes, halved
40g (1/2 cup) coarsely grated cheddar
20g butter, melted
Sour cream, to serve
Sweet chilli sauce, to serve
Methods
Step 1
Preheat the oven to 220C/200C fan forced and line a large baking tray with baking paper. Place potatoes in a large saucepan and cover with water. Cover and bring to the boil. Once boiling, cook for 5 minutes. Drain and set aside until cool enough to handle.
Step 2
Remove and discard the skins from the potatoes. Coarsely grate. Use a large knife to coarsely chop the grated potato. Transfer to a large bowl. Roughly chop the grated cheese and add to the bowl. Add the butter and season well. Use your hands to mix until well combined.
Step 3
Take level tablespoons of the mixture and use damp hands to press into little oval-shaped balls. Place onto the prepared tray and spray with oil. Bake for 10 minutes, before turning. Bake for a further 10 minutes or until golden brown and crisp.
Step 4
Combine the sour cream and sweet chilli sauce in a small serving bowl. Serve with the potato gems.
