Recipe Instructions:
INGREDIENTS
3 large potatoes
Bacon strips
4 cloves garlic,minced
A handful of spinach
Quarter cup chopped Leeks
4 tbsp cooking oil
1 tbsp paprika
1 teaspoon mixed spices
Salt to taste
1 litre water
Method
On a hot pan on high heat Place the bacon strips and cook them till they render the oil and are crispy or well browned. Take out and let them cool down before giving them a rough chop.
• On the same pan add 5 tablespoons of cooking oin, the leeks and the potatoes. Lower the hear to medium low and cook stiring for about 3minutes.
• Season this with the garlic,salt and the spices. Mix.
• Cook this uncovered with an occasional stir until the leeks start to brown.
• Add in the water,stir and cover. Cook this covered for 5 minutes then check if the potatoes are completely cooked through. If not cover again and continue cooking until the potatoes are fully cooked.
• -Taste and adjust the seasoning.
• -The soup should be thick and flavourful at this point. If it dries too much add some more water, let it boil for atleast 3 minutes before tasting again.
• -Add the roughly chopped spinach and stir it in. Let it cook for 2 minutes or until completely wilted.
• Serve this in a soup bowl and top with the bacon rashes.
