Recipe Instructions:

Ingredients:
• 4 large onions, thinly sliced
• 1 liter beef or vegetable stock
• 200ml white wine
• 2 tbsp butter
• 2 tbsp all-purpose flour
• 1 baguette, sliced and toasted
• 200g Gruyère cheese, grated
• Salt and black pepper to taste
Instructions:
1. In a large pot, melt the butter over medium heat. Add the onions and cook until caramelized, about 25 minutes.
2. Stir in the flour and cook for 2 minutes to form a roux.
3. Add the white wine and cook until reduced by half.
4. Pour in the stock, and bring to a boil. Reduce heat and simmer for 20 minutes.
5. Season with salt and black pepper.
6. Ladle the soup into ovenproof bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese.
7. Broil until the cheese is melted and bubbly.
8. Serve hot.
