Ingredients:

2 chicken breasts (approx. 400-500 grams) or 1 block tofu (approx. 350 grams), cubed (or 2 cups cooked vegetables, approx. 300-350 grams)
1 onion, diced (approx. 150 grams)
2 cloves garlic, minced (approx. 6 grams)
1 tablespoon ginger, grated (approx. 15 grams)
2 tablespoons curry powder (approx. 14 grams)
1 can coconut milk (approx. 400 ml)
2 tablespoons vegetable oil (approx. 30 ml)
Salt and pepper to taste
Brown rice (approx. 195 grams cooked per serving)
Naan bread (1 piece per serving, approx. 80 grams each)
Instructions:
1. Heat vegetable oil in a large pan over medium heat. Add onion, garlic, and ginger, and cook until softened.
2. Add curry powder and cook for 1-2 minutes until fragrant.
3. Add chicken, tofu, or vegetables and cook until browned.
4. Stir in coconut milk and simmer for 15-20 minutes.
5. Season with salt and pepper. Serve with brown rice and naan bread.
