Recipe Instructions:

Ingredients:
• 4 salmon fillets
• Salt and pepper to taste
• 2 tablespoons olive oil
• 1 teaspoon paprika
• 2 cups mixed vegetables (bell peppers, cherry tomatoes, zucchini)
• 1 cup couscous
• 1 1/2 cups chicken or vegetable broth
• Fresh parsley, chopped (for garnish)
• Lemon wedges (for serving)
Instructions:
1. Preheat oven to 200°C (400°F).
2. Season salmon fillets with salt, pepper, and paprika. Drizzle with olive oil.
3. Arrange salmon fillets and mixed vegetables on a baking sheet.
4. Bake for 15-20 minutes or until salmon is cooked through and vegetables are tender.
5. Meanwhile, bring chicken or vegetable broth to a boil in a saucepan. Stir in couscous, cover, and remove from heat. Let stand for 5 minutes.
6. Fluff couscous with a fork and season with salt and pepper to taste.
7. Serve baked salmon and roasted vegetables over couscous. Garnish with chopped parsley and lemon wedges.
