Recipe Instructions:

Ingredients:
• 2 tablespoons vegetable oil
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1 teaspoon grated ginger
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 cauliflower, cut into florets
• 2 potatoes, peeled and diced
• 2 tomatoes, chopped
• Salt and pepper to taste
• Fresh cilantro, chopped (for garnish)
Instructions:
1. Heat oil in a large pan over medium heat. Add onions, garlic, and ginger, sauté until onions are translucent.
2. Stir in turmeric, cumin, and coriander, cook for 1 minute until fragrant.
3. Add cauliflower florets, potatoes, and tomatoes. Season with salt and pepper.
4. Cover and cook, stirring occasionally, until vegetables are tender, about 15-20 minutes.
5. Garnish with chopped cilantro before serving.
