338. Steak Diane (American)
Ingredients:
• 2 beef tenderloin steaks, about 200g each
• Salt and pepper to taste
• 1 tablespoon olive oil
• 2 tablespoons butter
• 2 cloves garlic, minced
• 2 tablespoons Worcestershire sauce
• 1 tablespoon Dijon mustard
• 1/4 cup beef broth or stock
• 2 tablespoons heavy cream (optional)
• Chopped fresh parsley for garnish
Instructions:
1. Season the steaks with salt and pepper on both sides.
2. Heat olive oil in a skillet over medium-high heat.
3. Add steaks and cook for 3-4 minutes on each side for medium-rare, or longer to desired doneness. Remove steaks from skillet and set aside.
4. In the same skillet, add butter and minced garlic. Cook for 1 minute until garlic is fragrant.
5. Stir in Worcestershire sauce and Dijon mustard.
6. Add beef broth or stock and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
7. Reduce heat to low. Stir in heavy cream (if using) and simmer for another minute.
8. Return steaks to the skillet and coat with the sauce.
9. Serve steaks hot, topped with the sauce and garnished with chopped parsley.
