Ingredients:
2 chicken breasts (approx. 400-500 grams) or 2 cups mixed vegetables (bell peppers, onions, zucchini, approx. 300-350 grams)
2 bell peppers, sliced (approx. 300 grams)
1 onion, sliced (approx. 150 grams)
2 tablespoons fajita seasoning (approx. 14 grams)
2 tablespoons olive oil (approx. 30 ml)
Whole-wheat tortillas (approx. 6 tortillas, 60 grams each)
Salsa for serving (approx. 240 grams)
Instructions:
Cook the chicken or vegetables:
Heat 30 ml of olive oil in a large skillet over medium heat.
Add the 400-500 grams of chicken breasts or 300-350 grams of mixed vegetables.
Sprinkle 14 grams of fajita seasoning over the chicken or vegetables.
Cook the chicken for about 6-8 minutes until fully cooked, or cook the vegetables until tender.
Add bell peppers and onion:
Add 300 grams of sliced bell peppers and 150 grams of sliced onion to the skillet.
Continue cooking for another 5-7 minutes until the vegetables are softened and slightly caramelized.
Serve:
Warm the whole-wheat tortillas (approx. 6 tortillas, 60 grams each).
Serve the cooked chicken or vegetable mixture with the tortillas.
Provide salsa (approx. 240 grams) on the side for topping.
