Ingredients:
• 1 lb ground chicken, pork, or beef
• 1/4 cup chopped shallots or red onion
• 3 tablespoons fish sauce
• Juice of 2 limes
• 1 tablespoon roasted rice powder (see note)
• 1/4 cup chopped fresh cilantro
• 1/4 cup chopped fresh mint
• 1/4 cup chopped green onions
• 1-2 Thai chilies, finely chopped (optional)
• Lettuce leaves for serving
Instructions:
1. In a large skillet over medium-high heat, cook the ground meat until browned and cooked through.
2. Drain any excess fat and transfer the cooked meat to a large bowl.
3. Add chopped shallots or red onion, fish sauce, lime juice, roasted rice powder, chopped cilantro, chopped mint, chopped green onions, and Thai chilies (if using) to the bowl with the cooked meat.
4. Toss everything together until well combined.
5. Serve larb at room temperature or chilled, wrapped in lettuce leaves.
Note: To make roasted rice powder, dry roast uncooked sticky rice in a skillet until golden brown, then grind it into a powder using a mortar and pestle or spice grinder.
