Ingredients:
• 1 lb flank steak or sirloin, grilled to desired doneness and thinly sliced
• 4 cups mixed greens
• 1 cucumber, thinly sliced
• 1 red bell pepper, thinly sliced
• 1/4 cup thinly sliced red onion
• 1/4 cup chopped fresh cilantro
• 1/4 cup chopped fresh mint
• 1/4 cup chopped roasted peanuts
• 2 tablespoons fish sauce
• 2 tablespoons fresh lime juice
• 1 tablespoon soy sauce
• 1 tablespoon brown sugar
• 1-2 Thai bird's eye chilies, minced (optional)
• 2 cloves garlic, minced
Instructions:
1. In a large bowl, combine grilled and thinly sliced flank steak or sirloin with mixed greens, thinly sliced cucumber, thinly sliced red bell pepper, thinly sliced red onion, chopped fresh cilantro, chopped fresh mint, and chopped roasted peanuts.
2. In a small bowl, whisk together fish sauce, fresh lime juice, soy sauce, brown sugar, minced Thai bird's eye chilies (if using), and minced garlic to make the dressing.
3. Pour dressing over Thai beef salad and toss gently to combine.
4. Serve Thai beef salad immediately, enjoying the bold flavors and textures.
