Recipe Instructions:
Ingredients:
• 2 cups cooked white rice, chilled
• 2 tablespoons vegetable oil
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1 red bell pepper, diced
• 1 cup cooked chicken, pork, or shrimp, diced
• 2 tablespoons soy sauce
• 1 teaspoon sesame oil
• 2 eggs, beaten
• Salt and pepper to taste
• Green onions, chopped (for garnish)
Instructions:
1. Heat oil in a large skillet or wok over medium heat. Add onions and garlic, sauté until softened.
2. Stir in bell pepper and diced meat or shrimp, cook until heated through.
3. Add chilled rice, breaking up any clumps. Stir in soy sauce and sesame oil.
4. Push rice mixture to one side of the skillet, pour beaten eggs into the other side. Scramble eggs until cooked through.
5. Combine scrambled eggs with rice mixture. Season with salt and pepper to taste.
6. Garnish with chopped green onions before serving
